We created this rye bread for our German neighbour in Franschhoek. It took quite a few bakes until we tapped into one of Axel’s food memories to create this tasty bread.
It is a light rye, with a really soft texture. We blend and roast our own bread spice mix for a delicate fragrance of caraway with a few secret spices to add to the sensory experience.
We use 60% rye flour, some white wheat flour and oats. This is a really versatile bread that is particularly delicious with cheeses or salmon.
Shelf life 3 days.
Freezes well.
